Keep this in the fridge...and never have a boring meal again. We love this in the restaurant!
Whisk it into eggs, smother it onto Rye toast with tomatoes, throw some into some wholemeal/edamame pasta, toss some through your greens. Its got a weirdly creamy texture despite being dairy free. With none of the nasty preservatives or sugar, yes sugar, in the mass market jars...this really is better than shop bought on many levels! 1 cup kale 1 cup spinach 2 cloves garlic 1 cup organic virgin rapeseed oil 1 large bunch fresh basil 1/2 cup pumpkin/sunflower/pine nuts (optional) Pinch salt & pepper Put all in ingredients in a nutri bullet or food processor and blitz. Add extra oil to loosen if a bit to heavy. Pour into a jar and pop into the fridge. This should last a week or so! Easy Peasy.

If the name of these didn't grab your attention then hopefully the photo will! They are every bit as good as they sound but full of good nutritional things for you. You will need: 1 mug dates 1/2 mug almonds 1 tbs cacao 4 tbs peanut butter Blitz the dates and almonds in a food processor until you get a rubble texture. Add the cacao and pulse so its combined. Make 6 ping pong sized balls with the mixture and roll each one out. They do stick to a surface so I slide a pallete knife under to move the discs around as I roll them. Then take a small pastry cutter or glass and cut 6 defined circles out of the now flattened balls. Spread a tbs peanut butter on a disc and sandwich together. Repeat until you have 4 Oreos. Pop in the fridge for half an hour and then enjoy. We may want to embrace a healthier happier life...but lets be honest - That doesn't mean we don't want that trip to the fridge, that popping something sweet into our mouths and rolling of the eyes in sheer bliss moment!!
I like to keep the house well stocked of lovely treats to keep me going. AND THESE WE FALL BACK ON TIME AND TIME AGAIN! And so SIMPLE. Medjool dates are literally like soft caramel and are perfect on their own as a treat. But to glam them up even more, take out the pip and fill them with pure 100% peanut butter and chill. Take these to work for a 'pick me up'. Kate x You will need:
Makes 8 slices 1 cup almonds 1 large tbs coconut oil 1 1/2 cup dates 2 - 3 tbs maple or agave 3 tbs 100 raw organic cacao Handful raisins. To make: Blitz the dates and the almonds until broken up and mixed together. This will take a while, and you need a pretty good food processor to achieve this. When you have the right texture (I like mine with quite large pieces of nuts in) add a tbs of honey, a tbs cacao and give another few pulses so it combines. It should resemble chocolatey stcky mussily at this stage. Press into a lined small tin with a push up base. I use a small 6 x6 " square tin. Pop in the fridge in a small non stick pan melt the coconut oil, and then mix in 2 tbs maple and 2 tbs of cacao until you get a glossy paste. It will be fairly runny at this stage. Leave to cool for 5 minutes, then pour over the base and smooth into the corners before popping it back in the fringe. Leave for 30 minutes then cut into squares of 8. Seriously, these are incredible. So put the kettle on and sit back with a cup of green tea and a slice of heaven.. Kate x Protein packed and full of healing anti inflammatory goodness.
You will need: 1 can chick peas 1 large clove garlic 1 stem fresh turmeric 1/2 cup organic rapeseed oil 1/2 cup water Salt & pepper Place all ingredients in a nutribullet or blender and blitz until smooth (or lumpy, your choice), Serve with pomegranate seeds, or coriander. For an unusual breakfast or brunch serve on toasted rye, with seeds on top for crunch. Alternatively dollop onto a baked sweet potato or add to a Buddha Bowl for a delicious lunch or brunch.
