Emergency lunch dash for faculty member
One of our Pantry Tasters nearly called 999 -8020 earlier today when they realised they had left their lunch at home. This week they intended to eat 100% clean nutritious food so when we heard wind of this faux pas, we fired up the flashing lights and sped to their rescue with a surprise Clean Pack Up. A spicy Turkey chilli on a spinach salad with an energy ball to get them through their day.
Phew, the day is saved and there will be no need for a sandwich from the cafeteria - Maybe we are seeing a new side of the business develop. Clean eating delivery anyone?
There's a stalemate in the boardroom at The Pantry HQ today, as decisions over our signature teapot brings management to loggerheads! We shan't tell you who's is who's favourite, but instead put it to the vote of our Pantry People!
Roasted Garlic And Courgette Hummus
We love vegetarian food at The Pantry 8020. We are surrounded by amazing local vegetables here in Nottinghamshire and Lincolnshire, and we intend to jazz them up as much we can!
This is lovely to have in the fridge and goes well with Superseed Quinoa Crackers, but also good in a hospitality emergency!
Us spirilising wannabes tend to have a lot of courgettes wallowing in the bottom of the fridge, bought because we had all good intentions to spiralise ourselves some courgetti spaghetti this week and didnt.
Here's how you give those poor, unused, unloved courgettes a starring role at the table!
You will need:
4 -5 cloves garlic
1 tbs extra virgin olive oil
Juice 1/2 lemon
2 tbs tahini paste
Pinch of salt to taste
Slice the courgette and smother, using your hands, with the oil. Roast the courgette and garlic at 170 for 45 mins until golden. Burnt bits work well!
Allow to cool for 10 mins, and then either in a food processor or using a hand blender add all the other ingredients and pulse together. I like the mixture rather rustic and not overly blended. It can diminish the quantity too if over blitzed.
Chill in the fridge and then serve with a coriander garnish and a wedge of lemon.

"I once counted how many diets I had been on. I think I got into the mid thirties! The Goldilocks Diet, and The Cabbage Soup Diet were up there with my worst top 3!
I have always battled with weight. I only had to look at food and I would put it on and I was 4 stone heavier. Like so many women and men, I'd yo-yoed my way through so many punishing diets. Things got worse when at a certain point in my life I lost a lot of weight, and I became paranoid to eat for fear of putting it back on. My relationship with food got progressively worse.
I then met Master Trainer Sue Taylor from Isle Lose It, who introduced me to what I thought was another diet, to go alongside her famous Bootcamps. But something was different. I didnt count calories, omit carbs, eat less or weigh myself 3 times a day like I had done for a very long time. In fact scales were banned from the house. Eat natural food for two weeks she said, and with her guidance I did just that.
What was this magic? Why did I feel so strong and energised...like I had been given the body of a 12 year old and all I wanted to do was run and jump and climb trees?
The penny dropped, my lightbulb moment. Food isn't a bad thing, It's medicine. It's renewal. It's energy. All my fears of food seem to melt away and I saw it as a powerful fuel that had a direct impact on my body. And guess what, I maintained a healthy weight, I could almost say...easily.
It's true what our parents and grand parents always said..."As long as you have your health and happiness thats all that matters."
You may be wealthy, you may be talented, you may have the love of an amazing family or spouse. But we need to look after ourselves so that we can enjoy the things that make us happy. Your health, and the health of those you care about is EVERYTHING."
And guess what? I still have treats! I still love a curry or a slice of carrot cake (not together obviously). I live by the 80/20 rule which I will talk more about in our next blog.

The Pantry 8020 and Design Shack Interiors
"The fondest memories are made when gathered around the dinner table." Two weeks ago we had the pleasure of meeting Paul, owner of innovative company Design Shack Interiors, to plan and design our tables for The Pantry 8020!
Based in our own county of Nottinghamshire, Paul took the time to spend with us and little Sienna, and show us round his workshop located on a working farm in idyllic Epperstone,
Paul let our creativity and imaginations run wild, but managed to completely get what we wanted and we left super excited. We can't wait to see these in our new healthy eating restaurant coming soon in Misterton!
